  • Subject the meat to rigorous inspection by a government agency.
  • Comply with certain standards of processing and storage.

Real Kobe meat is certified by an official seal, which is applied only to meat that meets all quality requirements. The seal consists of a daisy with the logo of Hyōgo Prefecture.

In addition, real Kobe meat must have a marbling degree of at least 6 on a scale of 1 to 12. Marbling is the presence of intramuscular fat, which gives the meat its intense flavor and tender texture.
