What is Wagyu?
Not all Wagyu is Kobe, but that does not mean it is not as good and expensive.
Let us start by saying, for those who have not already figured it out, that wagyu is the best beef in the world. Having said that, let’s continue with a simple definition from Wikipedia, Wagyu (和牛 Wagyū, from the Japanese “wa”: Japan, and “gyū”: ox) literally ”Ox of Japan,” stands for the specific Japanese breed of their renowned and incredibly good beef.
Wagyu, unlike Kobe, remains so even if it is not Made In Japan, this is because Wagyu, as mentioned earlier is simply the breed of beef that acquires different characteristics depending on where in the world it is raised. One of our favorite variants is the Australian one, but the American one is no joke either.
Characteristics of Wagyu beef
The marbling of these cuts is truly stellar and unbelievable, the taste is delicious unique unbelievable awesome.
This beef is no joke, Wagyu costs the wrath of god and not only to the end customer, but also to those who sell it and even to those who produce it, this is because the quality of the beef is sublime.
This is why Wagyu is hard to find in ”conventional” places, we fortunately are anything but conventional, which is why you can find as many as six different types of Wagyu at our place on a rotating basis, these differences depending on the origin and type of cut.
